2025 Honey

Pure Honey: A “pure honey” label means that you are getting 100% honey, without any other ingredients. Honey is made up of mostly fructose and glucose.

Source: Wildflower.  Here at Cold Harbor Bee Farm our bees enjoy nectar from black locust, tulip popular, raspberry, blackberry, clover, autumn olive, maples, lavender, dandelion, American holly, red buds, henbit and more.  In support of their work, we have planted and work to maintain a 3-acre wildflower meadow as well as grow summer and winter cover crops on another 2-acre parcel of land. 

Raw Honey: The difference between raw honey and pure honey is that in addition to being pure, “raw” honey has not been heated to the point of pasteurization (no higher than 118°F). The benefit of not heating honey is that the naturally occurring enzymes, vitamins and minerals are preserved, and you get the full benefits of them from eating raw honey.  

Unfiltered Honey: “Filtering” honey means processing the honey to remove exceedingly small particles, often even as small as the pollen. Filtering honey is different from straining honey, which is commonly done to remove bee parts and other large debris prior to jarring while still retaining the pollen and other beneficial qualities of honey. With filtration, honey is also often heated to make the filtering process easier, meaning that the honey is no longer raw. Therefore, unfiltered honey is not necessarily raw unless labelled so, but it will be closer to its state straight from the hive than honey that has been filtered. 

Local: Produced here on our farm.  Honestly, honey from within 50 miles of your home can be considered local. Why local? People with a history of pollen allergies often find allergy symptom improvement if they eat local honey on a daily basis.

How do I store raw honey? Honey doesn’t expire very easily but it can become contaminated in certain circumstances. Store honey in a tightly sealed container away from light and extreme temperatures. 

After a while, your honey may start to crystallize. This is completely safe but can make it look grainy and sugary. You can warm it just slightly to melt the crystals, but know that higher temperatures can cook the honey, removing its raw properties and causing it to darken in color. 

If your honey has changed color drastically or smells off, throw it out.
